MINIMUM REQUIREMENTS Matric A minimum of 2 years cooking experience as a Chef de Partie in a Relais & Chateaux property of similar internationally recognised establishment 3 years apprenticeship in a formal training environment Experience on fine dining and a la carte service Fully computer literate Understanding of kitchen procedure and timing requirements and the ability to plan accordingly Understanding of health and hygiene issues safety procedures and the use of fire fighting equipment and first aid training SKILLS & ABILITIES A passion for cheffing and kitchen-related duties and be determined to grow in this area Good communication skills Good cooking skills Able to work under pressure DUTIES & RESPONSIBILITIES Preparation of food Ensuring that the cleanliness and hygiene of the kitchen is of the highest standard Correct use and maintenance of kitchen equipment Maintaining fridges and stores to the highest hygiene and stock rotation standards Management of dustbins and recycling Communication with kitchen and lodge front of house staff to ensure the smooth running of the department Training and Development in terms of kitchen skills Portion control Covering for the sous chef during cycle leave PACKAGE/BENEFITS Cost to Company Package Medical Aid Optional Provident Fund Annual Bonus at discretion of management Live in Meals provided Uniform provided
Renowned Lodge has an excellent position for a Assistant Food and Beverage Manager. Only South African citizens who are suitably qualified live in the applicable area and meet the requirements of the position are eligible to apply for this vacancy. The main duties of the selected applicant would be to assist in the supervision and control of all the catering outlets in the Estate to required standards and parameters. The successful applicant would be responsible for carrying out various duties to ensure that customers receive excellent service by providing the best food and drinks. Would be responsible for maintaining profits from food and drink sales having excellent communication and customer service skills maintaining a clean environment and making effective decisions when needed. Requirements: Matric/ Grade 12 Certificate Relevant food and beverage tertiary qualification would be advantageous Minimum 3 years experience in the food and beverage/ hospitality industry dealing with a large number of clients and guest Experience in similar reputable upmarket establishment Comprehensive understanding of all food and beverage outlets Strong guest relations skills Strong managerial skills Staff management POS and Cash-up experience Wedding/Functions/Conferencing coordination skills Own transport preferable - night-work mandatory Your contribution to the company will be rewarded with a basic salary accommodation meals.
