Drafting and implementation of departmental strategies profit improvement plans& promotions Conducting relevant Stock takes and monitoring of stock rotation Purchasing and ordering for all outlets - daily weekly & monthly following all policies and procedures set by the company and it s client. Adhere strictly to the provisions and regulations as contained in the Liquor Act No.87 of 1977 and other regulations that may be applicable to the sale of alcoholic beverages. Keeping an update of market trends and reacting on these effectively and efficiently. Conducting administrative duties& meeting set deadlines of both company and its client Related Education and Experience Requirements An F&B related qualification or similar At least 5 years experience in a senior management position Experience within a 5 star establishment Experience within a casino environment would be advantageous Computer Literacy in MS Office Micros and Fidelio is essential Extensive Food and Beverage knowledge Strong controls and management thereof of beverage operating equipment and food costs. The purpose of this role is to manage debtors accounts to ensure timeous collection of payments thereby ensuring optimal working capital management. Key Responsibilities: E-mail / post invoices and statements to customers on a monthly basis; Prepare monthly reconciliation and ensure the reconciliation is clean and long outstanding matters are cleared timeous; Print the debtors age analysis monthly. Identify clients in default and act immediately by contacting the client via telephone e-mail fax or to visit the client and resolve issues; Obtain a commitment to pay with a payment date and follow through on the commitment to pay. Use extensive communication and persuasion to expedite payment; Liaise with the business internally when assistance is needed to resolve a delivery matter; Prepare credit notes where needed ensure it is approved by line manager and ensure it is processed monthly (posted); Escalate unpaid accounts to line manager with supporting documentation to act timeously; Produce comprehensive clear and accurate financial reports relating to debtors to management on a weekly basis indicating payments received in the past week and status update on each customer payment; Actively assisting the Internal and External Auditors with their queries and follow through with timely delivery of answers on questions.
